St. Patrick’s Day is always a fun day to celebrate, whether you are Irish or not! Having some Irish ancestry in our blood I feel a special kinship to my fellow brethren and am obliged to drink green beer, decorate, and make as many fun green snacks and foods as I can muster!

Growing up I was never a fan of peanut butter and jelly sandwiches. The bread always got soggy, and I hated that. Frankly, I was a bologna girl! LOL What can I say, I like my meat! My girl is the same way, she doesn’t care for PB&J, she’s a deli meat girl too!
Normally she will only eat ham, but lately I’ve been branching out with my “lunch experiments” and she is now loving bologna, and this rotisserie chicken breast I got from Target. It is quite yummy! I even got her eating wheat bread! WHAT???!!!!
Experiment and have fun making your kids lunch, whether it is St. Patrick's Day or any regular day! It will MAKE THEIR DAY! 🙂
Grab your bread, deli meat, or peanut butter/jelly…as you like it: your “Sandwich filling”.
TIP: I usually only use one piece of deli meat for these types of sandwiches. I have tried to “save the excess cutting” and stick into the sandwich, but this often seems to cause it to be too “thick” and it can “bust out of the bread”.
I made that mistake a few weeks ago for Valentine’s Day week- but it looked like a broken heart in a way so it worked out. My kid still loved it which is all that matters! I also add notes and jokes in her lunchbox for a fun surprise. It really makes her happy and I know how hard school can be, so that little dose of love in the middle of her day reminds her how much mommy loves her. 🙂
Press the outer "cutter" down firmly, shimmy it a bit to get it down all the way, remove the excess cuttings.
Press down on the inner “sealer” layer to press and seal the sandwich. Slowly lift off and pop the sandwich out.

This was super fast and easy to do as well! I am always rushing and I still take time to put the extra effort into her lunch! It is really not that much work with these easy tools!
UPDATE: My Daughter LOVED the grass! She said it was so good and she LOVED this lunch – she ate it all, except the green pea snack, but I had a feeling about those!
